Hello Everyone!!! I got a request to do an ice cream cookie cake (two giant cookies with chocolate icecream in the middle) mmmmmicon_wink.gif I was wondering if anyone has done this and if you have some tips for me? I have never baked a giant cookie before icon_surprised.gif Also you know the little crunchies that come in an ice cream cake, I was wondering if I could replicate that with something? I thought about oreo cookies, but wouldnt they get soggy? Any tips would help thanks!!!!!

when i make giant cookie cakes, i use the toll house recipe doubled(no nuts), bake it in a VERY well greased 12 or 14 inch cake pan with parchment paper in the bottom as well, they like to stick. the ice cream part ive never done, hope this helps!

just press the dough in the pan with grease hands, forgot that part

that sounds really yum. I would let the ice cream get a little soft so it does not break the cookie

Hiya,
I made one before by doing the cookie dough in the bottom of a springform pan - I baked two of them around an inch or so deep. When they were done and cooled, I pulled the ice cream from the freezer to allow it to soften up. My assembly was like this:
icon_smile.gif I used the same springform pan with parchment on the bottom (maybe not necessary but I always use it) put in one cookie
icon_smile.gif Then layered on the ice cream on top of it
icon_smile.gif Then put the other cookie on top
icon_smile.gif Then froze the whole thing

It was for a family member so I took the whole assembly with me to the party and when it was time to serve we just popped it out of the springform pan. It held it's shape really well and was quite easy.

I use chocolate cookies for the crunchies - while it is not the same as one from carvel they tend to do the job ok.
