Help! I Left The Cake Out Of Fridge

I made a cake last night with strawberry fililng. I forgot to put in the fridge last night and woke up to see it sitting on the counter, I was so depressed icon_cry.gif It is a marble cake with strawberry filling and buttercream frosting, will it be alright to eat? It sat out for about 9 hours. I know have it in the refridgerator icon_sad.gif

Did you use fresh berries? That's what I'm assuming. Maybe this is totally wrong (I'm not a pro at all), but I'd think it'd be fine. It's not eggs or non-cooked dairy. The texture might be wetter than you want as the berries let off juice.

If you used preserves or pie filling, it's fine.

are you talking fresh strawberries or preserves? preserves or cooked strawberries should be fine....not sure about fresh...unless you soaked them in a simple syrup or something.

My filling is from a sleeve I bought at the cake shop. Very good I might add!

someone will correct me if i am wrong, but the buttercream should seal in the cake and keeps it moist, so iwould assume that the filling should be ok also. Is it a requirement that the filling be kept chilled, was it chilled before you put it into the cake?

My cake shop lady told me that all the filings you buy in the sleeves do not require refrigeration. You should be fine.

That's the plus about those sleeves, they are made so you don't have to put the cake in the fridge. icon_smile.gif
