Help! Newly Made Mmf Question...

Is is possible to cover a cake with newly made MMF or is it an absolute must to let it rest a day? I had wanted to cover a cake today but didn't make the MMF last night.

I covered a cake with mmf like 10 minutes after I finished kneading my color in, and it worked just fine. I have no idea why some say let it rest a day icon_confused.gif

I've used it an hour later and didn't have a problem. I know some colors will darken though, the longer they sit.

I used to let it rest but find that it actually is easier to work with if you use it right away. I do it all the time and have NO problems.

Excellent, the cake is in the oven, but since it is so cold outside this morning, I will put in the sunroom to cool and it should be good to ice and cover by the party.

Same here. I find it easier to work with right away also. I don't like to let it sit if I don't have to.

I usually let it sit for about 20min because it's usually still too warm. If you let it sit overnight, just stick it in the microwave for a few seconds.
