I've seen several cakes created from a bunch of cupcakes arranged together, it almost looks like a sheetcake with edges carved out of the sides. How do you get the top so smooth? It's like a sheet of icing! Beautiful!
I know if i tried it I'd end up with an uneven mumpy mess.
Please, enlighten me!

how do you get the icing not to fall in between the cupcakes when you don't do the staggering and set them up like a regular sheetcake...I did one and the icing fell through after it set for a while.
