Freezing Cakes Question

How long can keep cakes in the freezer, and how do you go about freezing them? I've been wrapping them up in parchment paper and then tin foil, but that is getting expensive and a little wasteful. How do you all freeze your cakes? I'd appreciate some advice. Thank you.

I wrap mine really well with saran wrap.

I do several layers of saran wrap then aluminum foil. No problems with freezer burn!

I take it that you don't decorate them before you freeze them? Are there any problems with smudging the icing when you wrap them up?

How long have you frozen a cake before using it?

I'm making my own wedding cake and could use some advice!

When i made my wedding cake i first iced and filled it with ganache. I covered the cake in wax paper kind of making a square for the top and then a strip that fits all around the cake. So its sort of the shape of the cake. Then i covered it in saran wrap lightly so i wouldn't hurt the icing ,and then again with foil lightly so i wouldn't hurt the icing ,but it woudln;t get freezer burn or nasty tastes. My cakes never got hurt ,and i just let them defrost in the wrappings all day and then took everything off to let them air dry and let some condensation evaporate. Worked fine for me. But when it came to cutting i found the ones that weren't frozen cut much much easier and much cleaner than the ones that were frozen.

hmm, thanks for the tip. I'm not sure how ambitious I will be to make the cakes the week of the wedding, but we'll see! icon_smile.gif
