Can Fondant-Covered Cakes Be Refrigerated?

I'm making a wedding cake of stacked books, and my house is rather warm. I'm afraid of the individual layers of the separate tiers sliding off of themselves before I get to the reception site tomorrow to assemble the cake.

Only decor that I'm using would be painted details and lettering, unless I decide to go with a quick BC.

So, any thoughts, suggestions, advice, calming words of wisdom for a slightly panicked decorator? icon_cry.gif

I've heard it isn't a good idea so I've never tried it. Sorry I can't be more help.

Answering your title, yes it can be refrigerated. THIS THOUGH, is only applicable to my experience w/ MMF and w/ those of all the members who posted on a similar thread in regards to SATIN ICE. HTH.

I do refrigerate fondant cakes in warm weather and have had good luck with them. I think it depends on the humidty in your fridge too. I line the shelves with paper toweling just in case there are any drips of condensation.

I have never done this, but I know another poster mentioned that they do refrigerate as well, but when they take the cake out, they set it in front of a low fan to help dry up any condensation that may form on the fondant. Apparantly this helps to keep the fondant from getting gooey...

Like I said...I haven't done it, but I just wanted to throw that out there so that IF YOU DID chill it and then you ran into the condensation issue you would have an idea of how to correct it....


Good luck...it is NEVER as bad as you have yourself worked up to. You are gonna do GREAT!!! Don't forget to pack all of the essentials that you may need at the site (including a little bottle of hootch...you know...to help celebrate when you get it all delivered and set up!)

Yep, I refrigerate mine...never had the 'sweat' problem...but the fan thing is a good idea if it does. thumbs_up.gif

I'm going to tint some more fondant, pack things up, and head to bed.
