Cake Storage?

I was just wondering about storing cake in the fridge after it's frosted &/decorated. I bake my cake a couple of days before & freeze it before frosting & decorating. Depending on the decor, I usually start the detail work the day before or the day of delivery. So far I've only used bc &/ fondant to cover the cake. I've just used Crisco to make the bc. No one has complained about the taste, but I would like to try using butter in the bc. I would also like to make some fillings with parishible ingred. such as heavy cream. Will placing the cake in the fridge dry it out? What is the recommended time limit of keeping the cake in the fridge? Also, if kept in the fridge, what is recommended for coverage of the cake. One more....Can fondant cakes with/without gumpaste decor be stored in the fridge? I know it's not good to place RI decor in the fridge.

I dont know about gum paste and fondant but I leave my finished cakes in the fridge for a couple of days with no problem I know in grocery stores they are allowed to sit in a refridgerated case for 7 days but if left that long I find the colors do tend to bleed.

Yeah, and the cakes from the grocery store are very DRY!

I refrigerate my cakes in an airtight cake box. The boxes work great b/c nothing in the fridge can accidentally fall/dent the cake. I have a rectangular one that fits 9x13 and a round one that fits a 9" cake. Both are made by Wilton.
