Morning fellow bakers!
I am looking for a strawberry bread recipe. A lady used to make this for us at work, then she left, and there went the bread... icon_cry.gif
She made it in loaves just like banana nut bread, same consistency, looked just like banana nut bread, but it had strawberries in it instead of bananas. Now it did have nuts... Also, it had like a sugary glaze on top of it.
Anyone know?

This is not a TNT, in fact, I just got this recently from another forum I belong to.

Strawberry Nut Loaf

1 3/4 cups flour
1 cup sugar
1/3 cup oil
1/2 cup chopped nuts
1 tsp. baking soda
2 large eggs
1 10 oz. pkg. frozen strawberries, sweetened and undrained

Stir together flour, baking soda and sugar. In a large bowl beat eggs and oil together.
Add strawberries with juice and beat slightly at low speed until berries are broken up.
Add flour mixture and beat at low speed, until batter is smooth with bits of strawberries still whole.
Fold in nuts. Pour into a greased 9 x 5 x 3" loaf pan. Bake at 350 degrees for one hour.

Glaze is easy to make, a little melted butter, a little water, some powdered sugar, a touch of vanilla.

My Grandma is in the process of making a recipe book for me and Strawberry bread just happens to be one of the recipes I have already! I am not sure the history of this, whether it came from a community cookbook or if it is one that has been passed down in the family. But it is one that she used to make quite often.

I have not had the chance to try it out yet. If you do please let me know how it is. (Note: I had to pull the ingredient list out of the recipe. So I did retype the recipe as I have received it just incase I missed an ingredient in the list.)

Strawberry Bread

4 Eggs
2C Sugar
1 1/2C oil
3C Flour
1/2t Salt
3t cinnamon
1t baking soda
3/4C nuts (optional)
1-16oz package frozen strawberries (thawed)

Beat together 4 eggs. Add 2C sugar and 1 1/2C oil.
Add 3C flour, 1/2t salt, 3t cinnamon and 1t baking soda. Then add 3/4C choped nuts and 16oz pacakge of frozen strawberries (thawed).

Pour in greased and floured 2 large loaf pans

Bake 325 deg for 1 hr or til done.

I forgot to flip the recipe over. The recipe came from family and it was also printed in the Times Christmas Cookbook (not sure what year)
