This may be a dumb question but I am fairly new to all of this and I was wondering. What exactly is the difference between fondant and gumpaste? When do you use one or the other? I have only worked with fondant a couple times (mmf) and have never used gumpaste but am interested in it.

Fondant is used to cover cakes and generally while the surface dries out it still maintains some softness as a cake cover for about 2 to 3 days. Longer than that and it does dry. Gumpaste is used mainly for ornaments (flowers and figures) It dries quite quickly and quite hard. It is better used for 3d figures than fondant would be.
