I made a cheesecake last night in preparation for Thanksgiving. I had planned to freeze it. It finished baking around 9:00 and had to sit in the oven two hours. Well, stupid me forgot all about it and went to bed. Woke up in a panic at 7:30 this morning!! It's in the fridge now, but is it safe? I certainly don't want to make anyone sick - quite a few elderly people coming to dinner.

I'm not an expert, but some cheesecakes call for it to sit in the oven for 5-6 hours after its done, then you have to let it sit and cool before you put it in the refrigerator. I'm sure its fine....I bake cheesecakes all the time and let them sit out a long time before I put them in the frig.

OH ya!!! IT's FINE!


I never put my cheesecake in the oven right after it comes out...i leave it on the counter until it's completely cool..or until i have time, then i take it out of the pan and refrigerate..

I think you have NOTHING to worry about...enjoy that cheesecake!

I think it's fine too. Here's a gross/funny story. I made mini cheesecakes for a ladies meeting once, and one lady loved them so much that she took 3 of the extras home. She didn't want to share with her kids, so she hid them in her sock drawer. She then forgot about them and found them 2 weeks later. She said they looked fine, so she ate them. icon_eek.gif My jaw hit the floor when she told me. I asked if she got sick and she said no, and that they still tasted great. That's really extreme, but I thought it was funny. I would never recomend eating any food left out that long, but she did eat it. Go figure. icon_rolleyes.gif
