Filling Cakes??

I've seen picture of cakes and people had put that it was a 11x15 with a certain filling. How do you fill a large cakes? I know how to fill a layed cake but how do you fill large cakes? I'm sure this maybe a stupid question but thought I would ask anyways.

You can either torte it. Which is cutting it in layers and filling. Or you can bake two layers and fill like you would for a smaller cake. Just don't bake really tall layers if you want a sheet cake look. HTH!!!

When you are torting a large cake like that how do you cut it and take a layer off without it falling apart?

Torte it and slide a rectangle cake board between the layers just like any other regular cakes. It's..uh, interesting getting it back off again, with large sheet like a 12 x 18, but it's doable. I usually just stack two 2" layers, but my sheets are done as wedding/kitchen cakes, and they need to be deep.

Slide it off onto a cake board.

I slide a thin metal cookie sheet under the layer to be lifted off. I usually don't have any problem sliding it back on top of the bottom layer, once you've added your filling. When you slice the cake, just make sure that the top of the cake is facing up, like you would have it if you were just going to frost it.

The biggest problem I have sliding it off is that it take the filling and pushes it off the cake. I'm probably just being too hasty.
