What To Do With Left Over Heavy Cream?

I am going to make some ganache in a few days, but I know that I will have left over heavy cream. Does anyone have any ideas on what I can do to use it up? It expires a few days later and I wouild hate for it to go to waste. icon_biggrin.gif

You could double (or triple) your ganache recipe (whatever it would take to use all the cream you have) and then make truffles out of the left over ganache. They would make a nice treat to have around for the upcoming holidays.

Edited to add: I should mention that you would want to keep out a little cream if you decide to do truffles because the ratio is a little different for them than when it's used as a glaze or coating. Ganache coating is about 1 part cream to 3 parts chocolate, and truffles are about 1 part cream to 2 parts chocolate. So, you'd go ahead and make a double recipe of ganache, then take the left overs and add some more cream to make the truffles. Hope that makes sense! icon_rolleyes.gif

You can use your leftover cream for cooking...it will make rich&creamy mashed potatoes, mac&cheese, you can even put it in gravy. With Thanksgiving coming up...I'm sure you'll think of something you can cook it into!

fresh strawberries and cream is always good too. My grandmother used to give strawberries and cream to us when we were kids. Luckily the holidays are here, it shouldn't go to waste.

Heavy cream will usually last a while in the fridge, so in addition to mashed potatoes, au gratin anything, beautifully creamy sauces, you can also just whip it up for your Thanksgiving pumpkin or sweet potato pie.

I used some leftover heavy cream last night, whipped it up with vanilla and sugar for hot cocoa, used some tonight in a cream sauce with asparagus & shrimp to serve over grilled fish, and really could have used it but had to settle for cool whip on the sweet potato pie that DH couldn't wait til next week for. icon_biggrin.gif

The uses are endless!!!

I put it in my coffee as a special treat. If you want to make it even more special, you can add a splash of whiskey too. icon_wink.gif

Add it to pwd sugar buttercream.

lucas, We had leftover coolwhip at work and found out that is also great in coffee.

Freeze the heavy cream. Cut it into small chunks.
Get a bottle of good whiskey.
Drink the whiskey. All of it.
Throw the heavy cream chunks out.
Nobody likes frozen chunks of heavy cream anyhow.

Shrimp Angel Hair White Sauce Lasagna (friends and Family love it)

Veggie White Pizza

Hot Chocolate

Whipped for pie topping

Cannoli Filling

Crepe filling

If you can think of it, put cream in it.
