Could someone recomend a good and easy chocolate icing recipe?
It with be used on a fudge cake with chocolate rasperry filling.

You might try the wilton recipe and use 3/4 cup of coco. I really like the taset of that recipe. icon_biggrin.gif

I basically use the Wilton Chocolate buttercream but use butter flavored crisco instead of regular!!

Can you use melted chocolate instead of cocoa?

I think you can use squares of melted chocolate instead. I prefer to use Nestle Cocoa, much better flavor to me!

If you're not doing any major piping, you can use whipped ganache, which is just melted chocolate and heavy cream.

Yes...3oz melted chocolate per batch of buttercream icing!
