Hi. I decided that I want to make my daughters 1st Birthday cake. I am going for the princess castle idea. I have never decorated a cake before. Any suggestions or comments on what to do, or what not to do? Should I bake the cakes a few days ahead and freeze them, and then decorate??? I am just not real sure about this?? Check out the Wilton castle cake in the Course 1 booklet. It is great for a beginner and it will be something she can grab onto with the cones.

I would decorate the cones on Wednesday (if you decide to--the picture doesn't show much decoration but I would decorate the cones completely), bake the cake on Thursday, begin to ice on Friday, and finish on Saturday morning.

I did one for my daughter's b-day in Jan=) Plan ahead, do all the little stuff you can ahead of time! I baked my cakes about 2 weeks ahead and froze them, then pulled em out early morning and decorated that afternoon. I made the frosting like 2 days ahead, just rebeat a bit and should be rdy to rock. I made the turets about a week ahead(I used paper towel roll(the cardboard part) and covered it in fondant, put windows on it made out of fondant and it was plenty dry in time. I also used the icecream cones(ones shaped like a triangle, think they are waffle cones) for the top of the turets. I did those a few days ahead too. Really helps to get the little things done ahead of time, then you can frost and put it together in no time!! And of course, after all that work, we forgot the camera=( HTH, Jen

I just looked in my course one book and dont see a castle cake in there.? Can you share the photo with us?

Im guessing but i think she might have an older book. Try the wilton year book.

(If that URL doesn't work, just search for better homes and gardens castle cake. It turned out really cute, but I would definitely do cupcakes with sugar cones on the corners next time instead of cake cones with sugar cones. They were so heavy by the time I covered them. Would've been fine if I was serving it at home, but I had to drive it 15 miles... and had to repair it. Luckily it was a free cake for a friend's granddaughter.

great thread! I'll be doing a princess castle cake this weekend. Just finished my sketch. I'm making a 2-tier cake for a little 6-year old girl. I'm planning to use the ice cream cones and dip them in pink candy melt. I'm still in the planning stage so I can't really help. I can PM you a pic of my sketch if you are interested.
