What Am I Doing Wrong?

I need help getting a bright color? Can you add to much color to your icing? Mine looks like it wants to start breaking down. icon_cry.gif

I have learned from CC to use Americolor, especially for reds/blacks.
Just used the Americolor red for the first time and it worked wonderfully!!! I didn't have to use the entire container like I had to do with the Wilton reds.
This probably doesn't help your immediate problem, but hope it helps you in the future!

Pearl70,
Yes, you can add to much color to your icing. I found that out this weekend when I made a cake and added to much Americolor to mine trying to get red. It did look like it was breaking down and it turned an almost Burgundy color. I learned my lesson though as I made a Valentine's cake and added a lot less of the Americolor red and it looks great.

Don't forget that your color will darken once it sets about 5-10 min. So if you want that dark red add some color then let is set then add more if you need to.

I agree. That and Americolor are the trick.

Thanks everyone.. I let it set with Wilton red for valentine/birthday cake in my photo's and it helped.

Wilton colors definetely need to set up before you achieve your true color.
