I am making a chocolate cake tomorrow and would like to make ganache for the first time. I want the filling to be chocolate/strawberry with choc. covered strawberries on top.
Can I put pureed strawberries into the whipped ganache recipe (here in the recipes)? If so, do I add them before I whip or fold them in after?
Will the moisture from the strawberries make the ganache seperate or seize?

Why not make your filling strawberry buttercream. Just make a regular BC icing and add pureed or finely chopped strawberries to the BC. You'll have to adjust your liquids for the added moisture from the berries. Then ice the cake in Chocolate BC and drip the ganache on top. Garnish with chocolate dipped berries..... probably will need to add a little pink food coloring to the strawberry BC for a more pleasant color!

I want to stay away from buttercream on this one. Aaah! I hate it when I overthink a flavor combination!! icon_mad.gif Maybe I'll just make chocolate cupcakes and put a choc cov strawberry on top.........back to the drawing board! icon_cry.gif
