Making Birthday Cakes For Company...mix Or Scratch?
Baking By cakes-r-us Updated 14 Nov 2005 , 3:46am by cakes-r-us
One of my customers asked her boss if I could do the company birthday cakes per month. I am excited. My question, they want to sample lemon and chocolate--no problem--should I make a scratch cake or use duncan hines as I have been making for my customer. she just loves it so much. thanks.
I would do what you would do for their monthly cakes. Don't do anything different just to impress them and then turn around and make something else later. They would be wondering what happened?!
just remember if they sample scratch, then your going to have to do it every month, and there are going to be times, when your really busy, that you might regret that...well, i know i would, b/c i just find it soo much easier to do a cake mix..doctored, yes, but scratch is always such a pain for me, and i find it really hard to get it consistent..a mix cake is like a guarantee...
just my opinion...
thank you all for your replies, I think making what my customer is used to and what she likes is safe. I don't want to be stuck making a scratch cake everymonth. I would have to have enough cake for 100-120 people. they have been buying from costco and my customer sd they do not like those cakes. Next thing will be pricing. I dont want to underprice just for the sake of getting the company business. But don't want to over price either. Any suggestions. She also states that they somestimes get a variety of cakes, maybe pies, etc but she sd always a cake with the names on it. Suggestions please.
