Question About Baking Powder

In my quest to find the most moist and flavorful scratch cake recipes, I've decided to do some experimenting. I'm trying to develop my own recipe. My question is this...Is there some formula for baking powder to flour ratio? (i.e. 1 cup of flour use 1 tsp baking powder)

According to the Encyclopedia of Country Living: An Old Fashioned Recipe Book page 207 you are right on the money!

1 cup of flour to 1 tsp of baking powder.

Thanks, that's what I gathered from looking at TONS of recipes. Does is say anything about fat (butter) to flour ratio?

That's interesting...is it true regardless of whether it's AP flour or cake flour?

It says that the ratio of flour to butter is equal in most recipes...

From what I can tell, it is the same for AP and Cake flour... icon_smile.gif

the amount of baking powder also depends on what size pan you are using and also the other ingredients in the recipe that contribute to the structure of the cake. do you have "the cake bible" b/c there is a good explanation of this in rose's book. that whole book is full of moist and flavorful scratch recipes. i would definitely recommend it!
