Quick question for all the experts out there.....

What is the difference between using gumpaste and rolled fondant to make cake decorations (flowers, bows, ribbons, etc)? Or can they be used interchangeably? I am making a cake for this weekend and the thought just occured to me.... icon_surprised.gif

I think gumpaste will dry faster and harder than fondant. One of my instructor mentioned that when you add fondant with gumtex.... it basically become very similar with gumpaste. The other thing is you can't really eat gumpaste but you may be able to eat the fondant.

Gumpaste has more elasticity, and therefore can be rolled much thinner than rolled fondant, without risk of breaking or cracking, if handled properly.

Some people have had much success mixing the two 50/50.

how about pastillage? has anyone tried that? i have read that it gets really hard, so is good for 3-d decorations. i have never tried working with it myself.
