I am in the first Wilton class and I am wondering if I have to use their buttercream recipe. I have fallen in love with Buttercream Dream, have a bunch left over from a party this weekend and would like to use it if possible. Is this a big no no? I don't mind making the other, just hate to waste what I already have.
Also, in this class we will do a transfer of a rainbow onto our cake. Since it is Valentine's Day, I thought it might be neat to bring home something for the occasion. Would it be worth calling my instructor to ask if I could do something else, or should I stick to the rainbow?

Since it is a Wilton class...they probably want you to use the Wilton Buttercream recipe.
I don't know if your icing crusts or not or does the same thing Wilton's does for making flowers and whatnot. That would be something to ask the instructor.
Using a different pattern should be fine. The main thing is they might you to learn how to do a pattern transfer. As long as it's something simple.
My instructor was pretty cool. I'm sure you can use your leftover frosting, and we were allowed any design we wanted. GOod Luck
In our first class last week, we were told that we had to use the class buttercream recipe so that if our icing was not the right consistency for what we needed, she would be able to tell us what we did wrong. Otherwise she wouldn't know. Also, we were told that we had to do the rainbow, but I know I have read some other posts on here where some were able to do a character cake or a different design using the star tip.

I am not real familiar with Buttercream Dream icing, the main thing with the icing is that it needs to be of a good consistency for doing flowers. As long as it smooths well and you can pipe stars I would think it would be okay. I think it would be definitely worth it to ask your instructor about doing a different design. I think the main goal is to learn the piping techniques that are being taught. Just my opinion.

As a Wilton Instructor I always welcome students to use their imagination and creativity. If they want to do something a little different from what "the book" says I am always fine with that as long as they are using the same technique and it can be done in the same amount of time as what was originally going to be taught. But, I can't speak for your instructor so you may want to check before you just assume she will be okay with it. As far as the frosting goes, I think if it's the same consistancy as the class buttercream than you shouldn't have any problems. Good Luck and have fun! ![]()
This is something that can vary by instructor. I'm an instructor and I ask my students to use the class icing for all the decorating and icing the first cake, but give them options for icing their cake with something different. If a student had experience and I felt they could handle a different icing I wouldn't have a probelm with it.
I also encourage students to try different designs on their cake. I give them the option of bringing in a cookie cutter to imprint a design or printing out somethin other than a rainbow to transfer. To me, as long as you're learning the techniques we're supposed to teach, I don't care about the other stuff.
BUT, there are some instructors that will want you to follow the book to the letter. There's nothing wrong with that either, you'll still get the practice and it can be easier to teach if everyone is doing the same thing. It would be best to call and ask your instructor and see what she prefers.
my instructor was very laid back. i don't think anyone in my class did a cake exactly like one in the book. we all just got creative and used the techniques we learned to do our own thing. if you think the buttercream dream is the same consistency as the other, and its not your first cake i bet your instructor won't care. did she give you her email? you can ask her before the class.
here is what my instructor told us about the buttercream. It needs to be the class one because it holds up to the practice that is done in class. You will use your practice board alot and pipe the items on it, then scrap that back into your icing bowl to use again and again. The class recipe will hold up to this use. As far as the design, none of us even asked if we could do something else, so dont know.
