Roller Woes

I'm just starting out and I purchased a pasta roller second-hand. The gal I bought it from told me not to wash it in water.

It's stainless steel. There is no documentation with it.

When I'm running gumpaste through it - it keeps getting gunky. Then the gumpaste wont go through smoothly, bunching and clumping up. I have to take ten minutes, or more - to pick the undercarriage clean with toothpicks before I can use it again. But after a few more good runs - it gunks up again.

Am I doing something wrong? Or does everyone have these problems?

Any help would be greatly appreciated.

I'm using the gumpaste recipe from Nicholas Lodge if that makes any difference.

If your gunking up that quickly you may need to cornstarch your gumpaste abit. also, every couple of run throughs, take your finger and run across the underside of the roller, where the roller meets the metal flap thing. And you should be fine. my guess is that your gumpaste is too sticky though, so try alittle cornstarch and see if that helps
