Does anyone have a good foolproof jellyroll recipe? Or does anyone know if a doctored cake mix will work? I tried making a sponge cake today and it didn't turn out very well. Thanks.

Jelly Roll
3/4 cup flour
1 teaspoon double-acting baking powder
1/2 teaspoon salt
4 eggs,separated,at room temp.
1/3 cup sugar
1/2 teaspoon vanilla extract
Preheat oven to 375.

This is the one i use all the time never had
any trouble with it. If you need any more

You might also want to try looking on Ladycakes.com. There's alot of recipes for fillings etc. there.

I did make a doctored cake mix in a jelly roll pan and a first it looked pretty good but it broke when I was trying to roll it. I let it cool for a few minutes in the pan then I rolled in a towl like the instructions said to but when I unrolled it and tried to roll it back up it broke and I had a big mess I'm not sure if it broke because of the mix or because of the way I handled it. I ddin't try another one. sorry don't know if that is helpful.
