Hi, I just wanted to show you all an inexpensive space saver I use to accommodate large quantities of cookies. This is a pizza rack with plastic cutting boards.

I picked up the pizza rack on sale at a restaurant supply store for $29, but I think they're normally around $50. I had the plastic cutting boards custom cut at a plastic shop. Pretty cheap, I think - only about $4 a piece. I had them cut in two sizes: 4x24 and 6x24 (1/4" thick).

You don't have to invest in the cutting boards though - before being licensed, I used to just cut strips of heavy cardboard and wrap them in wax paper to use as decorating boards. These worked great, but I didn't think that would fly w/the inspector, so I brainstormed and came up with an alternate idea. I can't decorate cookies when they're on a cookie sheet - I have to have them right in front of me. The boards help to cut down on the handling time and they are washable. You can do several cookies at a time and just move the board once. I filled this rack with 1300 mini heart cookies the other night!

Awesome, now you just need to come up with an idea, how i can find extra space in my house to put that thing in. Would be handy for cakes as well, if the spacing were higher, hmm

I'm sure it could be mounted to a wall. But then you'd have to get up everytime you needed to switch boards. I put mine right in front of me on the table while decorating. It measures 27" high and 12" wide.

oh I would love this, am getting to the point where I'm actually needing a separate room for my decorating. I hate it, when the cakes have to sit out in the living room, waiting for the customers to pick it up. I've got Figures and flowers etc drying just about everywhere as well

I, too, hate having to find a place to store the cookies while the icing is setting. I have visions of my two sons crashing into the whole lot while rough housing in the living room! I love the idea of the plastic sheets, too. The only thing I'd like them to have is a lip. Am I the only one who has had the cookie slide off the tray and onto the floor?

Nope, happened to me last night... baked 2 extra cookies for the order. The dog knocked me and I knocked the cookie which flew of the table square onto the floor.

Ironically straight into her food dish.

Clever dog.

Wish I had the space for something like that, but not with kids in teh house right now. I could see all 3 of mine poking at it while loaded with cookies.
