What To Charge!?!?!

I have a large order coming up. 700 cream cheese mints and cake for 300. Mostly assorted flavors of sheet cakes - no torting - iced with buttercream. A large centerpiece cake decorated with buttercream. I am not sure how I am decorating it as of now. What would be a good beginning price range for this order?

couldn't tell you about the mints, but I do at least $2.00 serving for a cake like that.

A lot depends on how you decide to decorate the centerpiece; what is your customary charge for mints? Where are you located? On an order this large BE SURE to get a substantial deposit icon_wink.gif

I say 3.00 a serving and what are your mints usually?

I've only made the mints once!!! LOVE them!! Better when someone else makes them so I would definitely charge at least $45 to $55 for those. Just so time consuming. Not sure on the cake as I'm just starting out.

At least $2.50 per serving for the cakes (including the sheet cakes!), more if you end up doing anything labour intensive like flowers, and the mints I guess I'd do cost x 3 and round it up to the next whole $10 for those (say they cost $27 to make x 3 = $81, so I'd charge $90 - but I don't know what they really involve - sorry!).

I can't help you on the pricing, but just wanted to know how well you all do with the cream cheese mints. I have tried them twice and found them to be too soft, never getting firm enough to hold a decent shape. Are they supposed to be that soft?

please don't be offended - I was just trying to get as many options as possible! I am horrible about pricing - I know that I always sell myself short plus this is for a church function so I am always cautious about charging too much. I appreciate any and all replies! icon_biggrin.gif
