I Need Help!

I have a wedding cake to make for Friday. I work full time so it is going to be hard for me to do this. Anyone ever had this dilema. How do I freeze the cakes and when should I thaw them out. I'm thinking about taking Friday off so I can finish the cakes up.

start baking now and freeze them.. just cover in plastic wrap.. i put mine together frozen and ice and decorate them frozen as well, they are easier to handle, tort etc.... they will sweat just a little bit but once thawed the decorations will be fine...

I work full time and then some. You don't need to take the day off. I usually bake my cakes on Monday (for a Sat) and let them fully cool and put a towel over the top of them and leave them in the pan. You can cook them at anytime and freeze them, I just leave them out the day before to frost, my friend frosts them frozen, so your call.

Wed I'll stack them and do an initial frost and maybe fully frost

Then Friday I'll decorate them. I usually don't have to stay up late.

Okay, I have had a couple wedding cakes due on a Friday before and I also work full time at another job. What I did was bake everything Tuesday night and make my icing on Wednesday and started icing. Then I finished icing and decorating on Thursday. I didn't have to freeze anything. I guess it would depend on how many cakes you need to make. I made a 375 serving cake once and I had to freeze that because I had to start baking on Monday.

I have 6 cakes to make I believe they are 9' or 10' cakes. It is basket weave.
