i am in australia and want to know the difference between solid vegetable shortening, solid vegetable oil, copha and all the other white fats available.
i want to make white buttercream and the recipe needs solid vegetable shortening is this the US version of solid vegetable oil? i dont think it is as solid vegetable oil isnt very nice to eat!!!!

to make american buttercream you use solid white vegetable shortening.

PARTIALLY HYDROGENATED SOYBEAN AND COTTONSEED OILS, MONO- AND DIGLYCERIDES
"Solid vegetable oil" is vegetable oil that has been hydrogenated, thus making it 'solid', which is the same thing as "solid vegetable shortening".
I do not know what copha is.
