Cooling A Sheet Cake

I volunteered to decorate a cake for my 7 year old's cheerleading squad (end of season party). This will be my first sheet cake and my only concern is how do you all cool the larger cakes? Thank you thank you! I don't know how I EVER came across this website but am so glad I did! I am on here daily. My hubby calls it my support group. icon_smile.gif

My biggest sheet pan is 12x18 and I have 16x24 cooling racks. One thing I do that helps is turn 4 juice glasses or 4 coffee cups upside down and put the rack on those. This elevates the cake so the steam from the cake doesn't create a pool of water under the cake. Makes for better and more uniform cooling.

I can't find cooling grids bigger than ones for cookies in my area, so last time I made my 11x15 pan I just let the cake cool in the pan. I put soup cans underneath it so that the bottom would have air flow. that seemed to work.
