What are the differences between fondant and gumpaste for decorating? I've heard gumpaste is easier to decorate with, how is that? I've used fondant but never have used gumpaste. Thanks for all of your inputs.

I think gumpaste is only for making flowers, etc... Fondant you can make flowers etc. with it and also cover the cake with it.

I know you can cover cakes with fondant and not gumpaste but I was wanting to know more about how come gumpaste is an easier medium to decorate (flowers, figurines, etc.) than fondant.

When you compare the recepies you will see that gumpaste contains tylose or gum traganth. Both subtitudes do the same for the paste, they will stabilize the mixture. You can see it when you make a larger ball from fondant as well in the same size with gumpaste. The gumpast ball the keep the shape much better then the fondant. The same will happen when you do the same with some delicate modelling like flowers, bows etc. due to the fact that a paste with stabilizer drys quicker.
