Have you ever made meringue cookies? They could be sweetened with Splenda and you could probably even chop up some low carb chocolate to go in them. Maybe even some nuts. I'll see if I can find a recipe online. I've never made them low carb before but there must be a recipe out there.

thank u so much much better then the sites I found and after posting this I got my new light and tasty magazine and sure enough the have low carb cookies and a mint meringues lucky me she loves mint
