My first BIG wedding cake is coming up this month (note the many topics I have posted in absolute panic!!
). The bride has decided to have me put fresh flowers all around bottom of the cake and a few here and there on the cake. How do I keep them looking fresh? They will be on the cake for several hours, how long will roses stay without water? Is there a technique for doing this? I have researched the little water holders that you insert into the cake but I don't think they will work for the bottom of the cake! Sorry for this being so long, but I want to get all the advice I can!!!
Roses are a great choice on a wedding cake, they should stand up to a few hours on a wedding cake, no problems. Flower picks are the best thing to use, even if you don't put water in them because they keep the flower stalks out of the cake. You shouldn't insert wires or anything that isn't food safe directly into a cake.
So what are the different time frames for different flowers? I saw a cake with calla lilies placed in small bunches around the different layers. How long do you think they would hold for? Any thought about fresh flowers? Thanks guys!!!
I set my cakes up sometimes 3 hours before the guests even start to arrive. Plus the time for all arrivals, plus the toasting, plus the appetizer time, plus the buffet time, THEN they cut the cake. And the flowers hold up fine.
I used to write a newspaper column on how to plan weddings and one column was entitled "No One Will Notice......" with a list of things that no one will notice (like if the little picture on your printed napkin is not the same as the cover of your invitation. Trust me, bride. NO ONE is bringing the invitation to the reception JUST so they can compare the art work!).
The guests will look at the cake when they come in, when the flowers are their freshest. After that, "no one will notice......"
