Evaporated Milk Question

I was wanting to put a filling in my cupcakes. The recipe I found on CC calls for evaporated milk. Would you have to put the cupcakes in the fridge after making and filling the cupcakes? These will be going to school for Valentine's Day and I don't want to do anything to make the children sick. If you don't think I should leave it out do you know of a recipe that could be left out and 7 and 10 year olds would eat? Thanks!!

I wouldn't think so. I use it in my pumpkin pie and I don't refrigerate that after it is made as my husband doesn't like cold pie. He's never gotten sick.
