How To Seal Fresh Strawberries On Top Of Cake?

Hi!

I'd like to know what does one use to "seal" fresh strawberries ( or any other berries for that matter) that would sit on top of the cake. My cake would have to be refridgerated (sponge with cream mousse layers). I read somewhere apricot jam & water boiled and cooled and strained? Can I just use any type of jam? or can i just put piping jel on the strawberries?! This question is for whole and sliced strawberries.

I wouldn't use piping gel, but you cancertainly use jam that's been heated, thinned out and strained. Apricot is recommended because it has a more neutral color, but if you are covering strawberries, a red jam would be fine too.
Also, next time you are at the supermarket, look near the geletin, tapioca and pudding boxes for a product called Clear Gel. It's a powder in a little packets that you boill with water and makes a clear tasteless fruit glaze.
