Ganache And Gumpaste

Hello! I was wondering if anyone new if you can place gumpaste sculptures directly on top of ganache? Im worried that the ganache will breakdown the gumpaste!! Any advice would be great!!

Never have used gumpaste. Ganache dries hard (not crunchy). I'm curious to see your creation as I've only seen minimalist designs w/ganache. hth

I don't see where it would be a problem....there is nothing in ganache that would break down gumpaste.

A true ganache, i.e. chocolate melted in heavy cream, will remain wet. I would experiment first with a play piece of gumpaste before trying it with the real thing. Better to be safe than sorry.

Hi,
I have done that. But I always put my figures on just before we serve the cake. ( I have one posted in my gallery. Angel and flowers)

Ganache is wonderful in that it can be made any consistency you want it to be. You can make it so that it dries hard and shiny. I love it! icon_biggrin.gif
