What is a good cake flavor for kids? I have to take 24 cupcakes to my daughter's class for her birthday on Monday but I have no idea what flavor to do the cake and icing?

Also, what icing goes with Devil's Food? That cake is due Tuesday.

Any help is appreciated...

I always do vanilla for my kid's classes. I think buttercream icing goes with chocolate or vanilla. good luck!

Well you can do half the cupcakes white and half chocolate and that way if some don't like either or.. they have a choice!

Well I guess I'll go with half & half. I appreciate the suggestions. My little one wanted cotton-candy flavored but I think I've talked her out of that! LOL!

For any of you that send stuff to the school for kid's birthdays, what else do I send? This is for my daughter's kindergarten class and it's our first time doing this? Do I send drinks or chips or what?

I have a great chocolate chip cake recipe (yellow cake with mini choc chips) that kids and everybody else loves. Let me know if you'd like me to PM you the recipe.

Whenever I have sent cupcakes to school with my kids thats all I'd send...no drinks or anything. I think it disrupts the class too much...(IMHO)... I think that chocolate chip recipe would be a hit!!

good luck...

I just took cupcakes into a 1st grade classroom, and they didn't leave a bite behind. I made choc. chip cookie dough cupcakes. Fill your cupcake papers as usual with yellow cake batter, and then take a small piece of choc.chip cookie dough partially frozen, and stick into the batter. Bake as usual. Very good. I have also tried choc. with pb cookie dough. They were good, but not as good as choc.chip ones. Good Luck, and have fun. Remember they are just kids. thumbs_up.gif

Ok, so no drinks or extras, just cupcakes. I think I'll try the choc. chip recipe and see how they like it! What do you frost it with?

Just make a yellow box cake, fill muffin papers as usual, and then take choc chip cookie dough pieces ( partially frozen ), put into batter and push to bottom of batter. They may or may not be completely covered, doesn't really matter. I usually buy, whatever brand is on sale, already cut into pieces dough. They come in 20 pieces; I just pinch off a little from a couple of pieces to make 4 more pieces. That way there is enough for each cup cake. Isn't it thoughtful the cookie dough makers only put 20 pieces in a box instead of an even 2 dozen? Very easy, and always go over well. Even my FIL complimented me, and I'm pretty sure nothing has frozen over, so they must be good icon_rolleyes.gif

Oh yes, I got the recipe for the choc. chip cookie cake from Alimonkey, and I have tons of buttercream recipes but I don't think I have a chocolate one. How weird is that?

Bulldog, thank you for that recipe. I'm very curious as to how that turns out. Doesn't the cookie dough bake differently than the cupcake batter? I'd have to try that one out when I'm not pressured to produce and I can play around a little. But it's at the top of my "to try" list!

I don't know if this is right or not, but I just add a bit of cocoa to mine.

However, my favorite quote.... "I am no expert!"

For a birthday I would at least send a drink with the cupcakes. I usually sent capri sun or some type of juice box that was self contained and needed no cups or anything. My daughter just chimed in and asked what I was answering when I told her she said .."oh yeah mom...tell em that kids LOVE sprinkles"...lol...HTH

I'll try that. I've got a few days to tinker and try out stuff.

KayDay, please let your daughter know that I hear her loud and clear and there will be plenty of sprinkles. The Capri Sun is a great idea! Thanks to you & your little one KayDay!

Here's the recipe. I usually ice with chocolate buttercream but you may want to try something else like caramel or at least a very light choc BC. Chocolate whipped cream would probably be best if you're just icing and not decorating. All the chocolate chips in the cake makes it much richer than most cakes, so you'll want a kind of toned down frosting. Although I guess the kids wouldn't care=)

Chocolate Chip Cake
Tastes like chocolate chip cookies...

4 eggs, separated
1/2 lb butter, softened
1 c white sugar
1 c brown sugar
1 t vanilla
2 1/2 c AP flour
2 t salt
1 c buttermilk
1 1/2 c chocolate chips* (tossed together with a
little flour to coat.)

Preheat oven to 350
Grease & flour 2 8 inch pans**

Beat the egg white until stiff but not dry. Set aside.

On medium speed, cream butter. Gradually add sugar and
beat until light. Add vanilla & mix. Add yolks, one at
a time, beating after each addition.

In another bowl, combine dry ingredients.

Add flour mixture to butter mixture alternately with
buttermilk, beginning and ending with flour. Mix just
until smooth. Fold in egg whites, then stir in
chocolate chips.

Bake 35-45 minutes.

*I use the mini chocolate chips, they stay suspended
in the batter better than the large, but you will have
more chocolate in the cake, so you can cut back by 1/4
to 1/2 cup if you like.

**The recipe calls for 8" x 2" pans but you may also be able to use 9"
- I usually have batter leftover for a skinny 6" cake
for snacking.

AP flour is all-purpose. I haven't tried it with cake flour, though someday I'd like to. I'm just afraid it wouldn't have enough structure to support the chocoloate chips. I hate when they all sink to the bottom.

Holy cow --- it was just brought to my attention that I posted the recipe for Choc Chip Cake wrong - it should also have 2 tsp of baking powder. What a difference that makes!
