Is Ganche Supposed To Taste Bitter?

I made ganche the other night and it was bitter - is it supposed to taste like that? I used semi-sweet chocolate then ended up adding sugar to it but would that have changed the properties of the ganache?

If you use semi-sweet chocolate, it may be a little bitter, just depends on your personal taste. If you add sugar, I would be afraid it would get grainy.

I usually use milk chocolate because that's what my family prefers.

I use the recipe on this site that calls for a little bit of sugar. I used half bittersweet chocolate/half semi sweet and thought it was good. Ganache is generally not overly sweet and since it is made with dark chocolate, maybe that is why it tasted bitter to you. I think it is just very rich tasting.

You can sweeten it with corn syrup. It will add sweetness and keep it shiny. Add it a little at a time until it reaches the sweetness you want. Bear in mind that the slight bitterness of the ganache compliments the sweetness of the cake.
