I have a groom's cake to do with MMF and I am wondering....can you add chocolate to MMF? I will be doing a chocolate cake with chocolate buttercream icing, but is there a way to make the MMF have a chocolate taste also? The MMF will be red in color - I am doing a GA Bulldog theme for it. TIA!!!
You can make choc. MMF. I add 1 oz melted chocolate and 1 tbsp cocoa powder to the basic recipe. (my "basic" recipe is 1- 16 oz bag of mini marshmallows, 2 tbsps water, 2 lbs powdered sugar) Recipes can differ somewhat on MMF, so just be sure that you add enough cocoa powder to keep the melted chocolate from making the MMF too sticky. ![]()
Thanks so much! That is the MMF recipe I use......do you think the chocolate will make the red look weird? Should I try white chocolate and add extra powdered sugar so it won't be sticky?
I think if you add regular chocolate to your MMF and try to tint it red, you're not going to get the bright red you're probably looking for. I would think you would get something on the lines of a red/brown almost burnt sienna perhaps. I think your idea of adding white chocolate and powdered sugar will probably give you a better red with a somewhat chocolate flavor (as white and dark/milk/semi choc don't have the same flavor).

I agree with Barefoot_Contessa, the choc. would make for a deeper red, but the white chocolate would definitely work. I use it sometimes too...same 1 oz melted chocolate (white), but you'll probably have to play around with the amount of powdered sugar to add (sometimes I don't even need the extra powdered sugar--it acts differently than the cocoa powder for whatever reason).
Another idea would be to add chocolate flavoring (candy flavoring oil) to your regular fondant. I've never done this, but I know Lorann makes a chocolate flavoring. Haven't tasted it, so I don't know if it would really be any good, but that's a thought.
