I think the less obstrusive the better. I've seen some done nicely with nicely draped fabric. And then some done where the fabric is what you first look at! I've taken to draping a piece of black velvet over a chair, setting the cake on the chair seat, and shooting that way. The velvet absorbs excess light, and pretty much just goes away. Of course, these are nowhere near professional quality. I'd listen to the advice of the photographer. Shooting white (which probably makes up a large portion of all our cake photos) poses many unique problems and he'll know what to put behind it so the light doesn't all scatter. I hope you're able to share the photos when they're done.
I have a beige microfleece blanket that I use for almost all of my picture backgrounds. It has a nice soft texture, is neutral, and gives my photo album a uniform look. I bought one of those project boards that kids use for science fair projects and I clip the blanket to the top. This way the blanket comes down onto the table so the whole background is uniform. I'm anxious to see your pics! Professional photographers can really jazz up a picture with their know-how!
