My post seems to have disappeared. sorry if this is a repeat for anyone. I am making Valentine cookies for my little sister's class. I am doing the heart postcard ones from the wilton site. I am going to use white fondant and then write on them with a food marker. I have never used fondant at all before so I'm clueless! Do I write on them right after I cut them out or do I need to let them sit first? Would it be best to write on them before I put them on the cookies or after? Do I keep the fondant airtight after it has been cut out or does it need to harden? What about after it is on the cookie...if I put royal details on top (which I don't think I will be on these specific cookies but might try that on some other ones), is it okay to let them sit out for the royal to dry?
I was going to put the base fondant on right after they come out of the oven. What if I want to adhere some little fondant accents to the top...what is the best way to attach them?

The fondant will need to dry out a little before you try to write on it, or you may dent the fondant with the markers. I would put the fondant on the cookies after they have cooled a little (using a little spritz of water if needed to make it stick in place). Then let these sit for several hours (overnight), then do your writing and add your accents (which can be stuck to the fondant covered cookie with a little water).

Hi, when applying fondant to cookies or cakes - first let the cake or cookie cool. Then apply a little buttercream over the cake or icing on a cookie and cover with fondant. Let it dry for 24 hours to harden before writing on it. If you want to add small fondant accents just dab a small drop of water on the bottom of the piece you want to attach.
If you keep fondant in an airtight container it will go soft, but will firm up again if you leave it out for a while.

I'm a little different in my way... I cut out my fondant shape BEFORE my cookies ever see an oven, and let them sit (most of the time overnight, sometimes a couple of hours, sometimes not very long at all).
Then I decorate my fondant (MMF) pieces - this is STILL before I bake the cookies. I just use water to attach, but the idea of "fondant glue" mentioned above is really cool!
Also, I place my fondant cutouts onto my cookies IMMEDIATELY after they come out of the oven, the fondant "relaxes" with the heat of the cookie and forms a tight seal (every now and then I have to gently press an edge down). I've never had any problems with melting, except for the time I decorated the fondant with melted candy pieces... that was a little scary.
I still haven't had good luck with food markers, sometimes I think about just giving them to my daughter to color with. They always seem to dent my fondant. I haven't experimented with the ways to get the "ink" to flow better though. Some say a little water or coloring on the tip.
