I have had such a great day! Today was the first of four days in the class Collete's Cakes. She is wonderful! I have seen posts of people saying she isn't a good teacher and wasn't very nice, but I love her. The class is wonderful. She is very hands on and extremely friendly. I can't wait for tomorow. If any of you have the chance to attend this class, I totally recommend it! ![]()

Thank you so much! I feel like I'm just starting to learn and I have so far to go. i've only taken wilton classes so this is a big step for me
We made some cool flowers today. We will be making some more tomorrow. Then we will learn how to color them diffrent ways. After that we are going to be doing brush embrodery, stringwork, embossing, anf some more fondant stuff. Then we get to make a three tier dummy.
I know she offers this class at wilton, but I'm taking it at the Notter School in Orlando, FL.
Oh, in that case you should sign up for one of Ewald's sugar classes. He is a wonderful instructor and you will learn so much.
He is amazing! His assistant brought in two kinds of chocolate hearts for us to try today. They were devine!
I don't know if I could do the sugar art class though. It looks way out of my league.

One of the girls in class told her she was on food network last night. She was like, Really? It was funny. She said every time she turned it to food network, it was on Paula Dean.
i'm so jealous. seems like there's not much in good ol' indiana. there was an ices day of sharing that i planned to attend, and that a.m we woke up to 4 inches of snow (this town is not good at clearing snow) and worsening weater, so ididn't go.

That's really great. There's nothing good down in Southern California in regards to cake. Florida, Chicago, NYC. . .everywhere on the East Coast.

I LOVE Notter and his class, I lerned a lot...go teke his class just to see him work..(and his cute too)
Glad to hear you are enjoying Colette's classes. I did the 4 day course at the Notter school back in October and enjoyed it enormously, and learnt so much. I found Colette a great teacher, she is very down to earth and she peppered the lessons with lots of tales from her life making cakes for the rich and famous. I am going back in May to do the advanced course.

They are so good. We were spoiled because they brought us so many diffrent kinds today!
I am also coming back for the advanced class in May. I got the last spot in the class. I'm so excited. We had another great day. We learned the rose, lilly, peony, orchid, poinsettia, and brush embroidery. I'm worn out, but it was fabulous!
Ok... I'm back home now. I had the BEST time. We started working on our cakes on day three and spend all of day four finising them. We could choose any design that we wanted. Her only request is that we did something new using a technique we learned in class. She was so wonderful and I have signed up to take her advanced class in May. I took pictures of the cakes from class, but haven't uploaded them yet. Hopefully I'll get to it soon. ![]()

Thank you! I learned a lot. we learned about using the airbrush, some gumpaste flowers I didn't know. She showed us crimping techniques, how to use luster dust. I already did a lot of the things, but she showed us easier ways or better tricks that I didn't know. She also answered any questions we had about the business aspect of things. The first morning we had about a three hour question time where we asked her anything we wanted. It was really helpful.
I'm taking both her classes in October. At the Wilton School in Chicago. I'm so happy to hear it was fun!
