I have a wedding cake to do in April, and I have the Wilton Decorator Preferred (similar to Magic Line w/ 90 degree corners) 9x13, 11x15 and whatever the biggest sheet is. The bride wants square cakes, and I was wondering if anyone has ever used the sheet cakes and cut them down to squares.

Or should I just break down and buy the square pans.

Propobably would be alot easier and save you a lot of grief if you used the right size pans. It would be a good investment, I'm sure you would get a lot more use out of them!

Plus you wouldn't have to cut off cake (what a waste), and deal with all the cake crumbs!

If this is the only square cake you're ever going to do, then you can cut them down. Freeze them a little before you crumb coat them to make it easier. Otherwise, buy the pan. I use mine a LOT!!

I would invest in the square pan set. Use a coupon for Michaels or Hobby Lobby so you can get it cheaper, but it is a good investment.

I actually once cut down a 12x18 sheet into a 12x12 for a wedding cake (last minute wedding, didn't have time to order the pan). It worked just fine.

I go the other way. I tend to buy the smaller pans (like a square one) and use 2 of them for a rectangle cake.

I bought Magic Lines large 12" x 18" pan and have cut it down to squares many times. I am not able to invest in the square pans yet and this does well for me. I do have cardboard templates that are covered that I can lay on the cake and cut around. I sould suggest to make sure that it is either frozen and thawed for about 15-20 mins or has been in the fridge overnight. The cold makes a big difference in how well it cuts.
