I have a potential wedding cake client contacting me for a late January wedding and wanted to know if I can make sugared grape clusters to adorn her "dream" wedding cake.
Does anyone know how to make small clusters of attached grapes get that amazing crystal-ly sugared look? At craft stores, I have seen artificial sugared grapes, but haven't seen real ones!
I hope it is easier than it sounds!

Very easy ...
brush the grapes with egg white (I use pasteurized egg whites or meringue powder and water)
pour lots of sugar over the wet fruit (use the coarse decorating sugars for a pretty crystal look) and the gently lift the grapes out
set aside on a cooling rack to dry overnight and lightly (with a VERY soft brush) dust off any loose sugar!
Just watch out for humidity ![]()

Temps are in the 2-12 range these days (that's celsius... converts to 35-50 F) which are quite balmy for this time of year! (Mind you, I am in Southern Ontario so I am well south of most of Michigan!)
When I was a kid (in Northern Ontario) we ALWAYS had snowsuits under our Halloween costumes, and there was usually plenty of snow on the ground! ![]()
It is very easy. I just did a cake in this month decorated with nothing but red and green sugared grapes. I sugared 25 pounds of grapes in an evening. ON the second day, the day of the wedding, I just sprinkled them again before delivering the cake.
I used about 2 tsp of meringue powder to about 4 cups of water. I washed the grapes, dipped them in the water, and then sprinkled sugar over the wet grapes. I let them air dry for about 1 hour and turned them over to sprinkle the bottom. To sprinkle the sugar I used a small scoop.
As I said I sprinkled again on the second day and they were beautiful.
