Forgot to mention it's the horse cake....I tried emailing her but it came back rejected.....
I know of some people that have used the 3-D lamb cake pan to do horses. You'll have to make some modification to it, but it'll work. Other than that, I don't know. You could try carving it out of stacked sheet cakes, just make sure you use a dense cake so it will hold up.

There's a couple of ways you can do the head "free standing". You can make the entire head out of rice krispies with dowels going down through the head into the board (sharpened dowels preferably).
Or you can have a support board hidden in the cake to support the head. Then, on the underside of this support board you can add a little shaped styrofoam or tin foil to make the bottom part of the nose. This is the how I did my hamster cake. You could just make the underside longer, more like a horse. This support board has dowels underneath too, also hidden.
Right now I'm in the process of making a free standing dragon. It's been challenging trying to figure out how to make it work!
