? About Wrapping Cake W/ Saran Wrap

Hi ladies... I remember reading about wrapping the cake w/ saran wrap to hold the moisture in. Well do you do this right out of the oven when there are still steam? or wait till it cools for about 20 mins?

Wait a few minutes, so that...
A- you don't burn yourself.
B-ever melt Saran Wrap?
C-Give the cake a few minutes to "set" as it cools, and it will be less likely to break.

I do it right out of the oven. I have the plastic wrap waiting..then I turn the cake upside down onto the plastic then wrap it up. It probably takes longer to cool, but seems to work.

I read here on CC to wait 10 mins. and then cover. I usually cover in parchment paper first and then saran wrap. I don't know if I'm doing an extra step or not though. How does everyone else do it?

I let the cake cool about 10-15 minutes before I wrap it and then I put it in the refrigerator. If you do it immediately the cake outside of the cake will be too moist and sticky to frost. Everyone comments on how moist my cakes are now.

thanks ladies...I just took the cake out of the oven. so I will wait a little bit...hopefully I get the same great results you guys did! =)

I used to let them cool but cake decorator in town and wilton instructor said she takes them straight from the oven cools about 10 minutes wraps them and freezes said they are really moist.

Been using this technique for 35 years! Cover right out of the oven. All the moisture stays right in the cake. It's fantastic!

I cover after about 10 minutes. It is still steamy, but the saran wrap doean't stick to it. Also, when I do the saran wrap thing, I don't decorate until the next day, so I have never had a problem with the cake being too sticky to frost.

I fill my pans 3/4 full of batter. After it's done baking, I leave the cake in the pan, put Saran Wrap on top, put my cutting board on top of that, and then something heavy on the cutting board. I leave the cake in the pan for 10 minutes. Then, I remove the heavy object and the cutting board. The cake top is now flat (no cutting required) thumbs_up.gif . Then, I easily flip the cake out of the pan and completely cover with Saran Wrap til it's cooled and I'm ready for the crumb coat (usually the next day).

They're always moist no matter what kind of cake mix/recipe/add-ins I use thumbs_up.gif
