I've been asked to make a cake using cream cheese icing. I found the recipe for the crusting cream cheese, and have read a lot of posts about it. My question is does the cake have to be refrigerated once iced? Any help is greatly appreciated!

Flur,

Welcome to Cake Central!! Yes, you need to refrigerate a cake that is iced with Cream Cheese icing. I love the crusting cream cheese icing. It is smooths out well and you can pipe decorations with it as well.

I'm assuming that the icing has to be room temperature, like buttercream, to ice the cake. Is this correct? How long can a decorated cake be left out? I don't want them to eat cold cake!

The icing does need to be pretty close to room temp. to decorate. You can safely leave the cake out for a few hours without a problem.

I'm sorry I have so many questions. If the shower is at 7 p.m., when should they take it out of the refrigerator? Also, can I color it just like buttercream?

I like using crusting cream cheese icing also. When you color it, it is a little different than when using pure white though. Do the coloring a little bit at a time.
I would take the cake out of the frig no later than 3 or 4 that afternoon.

You can definately color it like buttercream. I just did a baby shower cake a few weeks ago and colored the icing yellow and green and it looked great. Best of luck!

One last question, I hope icon_biggrin.gif I plan on decorating the cake mid-morning; is it crucial that I put the cake in the refrigerator if they are going to be taking it back out for 3-4 pm? I just want to make sure that I do this correctly. I don't want any sick people on my hands!

I would keep the cake in the refrigerator for as long as possible. I really don't think anyone will get sick if it stays out, but why take any chances.

From my understanding, cream cheese, whether in an icing or not, should only be left out for less than 4 hours.
