Pudding Filling Recipe Help

I am trying to use vanilla pudding as a filler for my cake. However, since it is for a Christmas wedding I'd like to make the filling red. I don't want to just use food coloring. I thought I could flavor the pudding with pomegranate juice, but I don't think that will work.

Do you have a recipe of something I can add to the pudding that adds flavor and color? I might try reducing the pomegranate juice so it is very think, but I hope there are some suggestions out there.

I think that a raspberry or pom filling flavor would be tastiest. SO MANY THANKS!!

Figured it should work, as the thickener in pudding mix is cornstarch; so did a search for you, and came across this recipe. It uses both milk and pineapple juice, but if that works, I see no problem with pomegranate.
