Cake Pans - Is 1 Brand Better Than Another?

Sorry if this is a stupid question...... I am preparing to do a square stacked cake and I want some really sharp corners on this puppy. Will 1 brand of pan give me a different outcome than another? I was just planning on going to a certain craft store and plunking down my 40% off coupon and just buying the Wilton pans. Is this ok thinking or am I better off buying something else? Thanks!

You will be better off buying Magic Line pans.

I couldn't agree more. The extreme, crisp angles you get from a Magic Line pan are something you won't find on any other pan. (* exception being Parrish). All my squares are ML and I love them. I brush Crisco generously and flour to be sure to get perfect, crisp corners.

Wilton pans don't compare - they're not even in the same league (they're way too thin, burn easily and the angles that are not sharp or 90 degrees) and neither do Fat Daddio's (these are nice and thick but must be cooked at a much lower temperature, which is a huge pain. I do have the FD set in Hex since I couldn't find it in Magic Line and the Wilton set looked worse.)

How much baking do you do?

The Wilton pans work great for me, as I only bake for family and friends. And using the Hobby Lobby 40% off coupons, and attending the Wilton tent sales has allowed to me to purchase double sets (no waiting for pans to cool & then clean to use again). icon_smile.gif

For square corners, the Wilton individual Decorator Preferred pans are superior to the Performance pans (which have rounded corners).

Unfortunately, the square set is only available in the Performance line.

Info on high performance, heavy duty commercial pans which are an investment (with a commensurate price tag)....

I have no issues with the Fat Daddio pans that I have.. I even have some wilton ones and they are fine too. It all depends on preference. I like that the FD pans are annodized.

Pans LOLOL they are giving me a headache. I have a ML, 12x18, and round FDs. A few weeks ago I was baking a 10"round FD pan. It took about 50 minutes to bake. Two days ago I made a 12x18 ML pan. I figured I easily had the 50 mins to play with. No way the cake was well lets toast. LOLOL. I do prefer the ML pan over the FDs though. I just wish I could get ML rounds locally.

Thank you for the insight. I already bought (but kept the receipt though) 2 12X18 Wilton pans.... Since these have so much surface area, I am probably better off going with a better product, huh? Is there 1 place in particular that you buy the Magic Line pans? I see the Fat Daddio's everywhere online, are they just a step below Magic Line or much lower than that? Thank you for your help!

Sorry for that premature post, I just read through the link that JanH posted and see that Magic Line seems like a wonderful product. I would still be interested though if there was a "go-to" place to get them. Thanks!!
