What type of cake do you use? Everything I have read says sponge type cake and I have never made one of these. Anyone have a tried and true recipe?

How about a pound type cake? Or a mix cake with an extender added to it?
Some people want a thin filling in the cake. Most I deal with don't. So go from there. HTH

Ive tried it with a box mix and the sponge did not stand up very well though the extender may work never tried it. A genoise type sponge may work. Go here www.allrecipes.com and type in petit fours there are dozens of recipes.

You definately need a "firm" cake for the petit fours. Pound cakes work the best for me.

CakePhun,

Your petit fours info should be added to the tutorials, it would be a great resource.

Would you mind submitting the article icon_smile.gif
