I had a party scheduled for today and it cancelled this morning ...... I had not yet frosted cupcakes (4 dz regular and 2 dz mini). I would like to freeze them for use in two weeks. Is there anything in particular I need to do when I freeze them? freeze first wrap later or vica versa. Please help as I have never had to freese a cake before.
THanks for any advice you can give.
My SIL wraps them in saran wrap - like 2 at a time and I think she then put them in a plastic container before putting them in the freezer. HTH.
I would double wrap each in Saran Wrap then put in gallon size freezer bags, then put them in plastic tupperware containers. No chance of freezer burn this way. And they stay fresh.
Okay, this seems so silly, but when freezing do you take them out of the papers, double wrap, etc., freeze, and then put them in new cc papers to ice/decorate/serve?
Please forgive my ignorance on this
TIA
I freeze cupcakes all the time, I use 2 gallon size ziploc bags, cut a piece of cardboard smaller than the bag, place as many cupcakes as you can on the cardboard, put a large sheet of wax paper over it, slide it into the ziploc, put in the freezer. I keep them in the liners. Once they are frozen you can stack them on top of each other. When you need them just slide the whole piece of cardboard out of the ziploc, peel the wax paper off and you are good to go. I've had cc in my freezer like this for a month or more and they come out great.
So you don't wrap them in saran wrap? The liners don't get soggy or wrinkled? Do you use plain cupcake liners or the foil ones?
Thanks so much for the help!
I don't use saran wrap and the liners don't get soggy. When they thaw its as if they were just baked. If you have an old 12 cup muffin tin, it also fits perfectly in the 2 gallon size ziploc, put a sheet of wax paper on top, slide it into the bag and put in your freezer.
Agree with VWW104! I have put them in a shallow flat box then cover with saran a couple of times and then just slide in the zip bag. No problems and they are like you just cooked them. Take out of the freezer and unwrap to thaw and decorate! Paper wrapper or foil will do fine.

thanks for all the great responses ..... I sure didn't want them to go to waste.
