my friend is veegetrain but her boyfriedn is vegan. i wante dto make her a marshmallow fluff covered cake (fondant) but he cant eat it. does anyone one know a no-fail vegan chocolate cake recipe and bc recipe that will be easy to use for a good finish so that i dont need fondant?

Hi there! I have been vegan for quite a few years and I also love to bake and decorate. So, I think I can offer you some advice. Of course, marshmallows are not veg*n, so I plan on using either this vegan marshmallow fluff from http://www.veganstore.com/index.html?stocknumber=628%20%20%20%20%20%20%20ORIGINAL

I've had both the fluff and marshmallows and they honestly taste just like the regular stuff.

I made a cake this weekend for a child who is allergic to pretty much everything on the planet. I used a chocolate cakemix from Cherrybrook Kitchen which is egg, gluten and nut free. The website states it is suitable for vegans. The cake turned out fine, not as dry and crumbly as many gluten free products, and had a strong dark chocolate taste. The Cherrybrook also has other mixes as well as a chocolate frosting mix. The chocolate frosting was delicious, made up with margarine and soy milk. I live overseas so I cannot tell you where to get it in the US, but maybe places like Whole Foods or Wild Oats.

One of my sons has nut and egg allergies, so we've used the Cherrybrook Kitchen cake mix, too. It can be bought at Whole Foods, or online at:

The only thing to be aware of is that one box of cake mix only yields one single layer 9" cake.

thanks guys! id never heard of vegan marshmallows. this should be a lot of fun. if i do plan to substitute apple sauce for oil, is there anything i need to keep in mind? is it a direct substitution and also do i need to reduce the amount of sugar i add? and by how much?

Octopus -

When I substitute apple sauce for oil, I use the same amount of apple sauce as the recipe calls for oil. The cakes always turn out really moist.

does anyone know how many cakes the vegan recipe makes? (the one from scratch?) coz i know you'll said that the cake mix only makes half a cake......is this true for the cake from scratch too?
