OK so I've been coming to CC for years now, and of course there's lots of talk about Mud Cake this and Mud Cake that.
So what the heck is Mud Cake anyway? I'm dying of curiosity.

An Aussie mudcake is (traditionally) a very dense, very chocolatey cake, made with melted chocolate.
The closest recipe I've found to the one I prefer is at

You can also make white mud or caramel mud by using white chocolate and/or brown sugar, and the recipe lends itself to various flavourings. One of the most popular (amongst my customers, that is!) is dark chocolate, with orange zest and orange liqueur.
It's a really versatile cake and can be carved easily because of the dense texture, but be warned - it is VERY heavy, so tiered cakes need to be well-dowelled!

The first Mud Cakes we used to eat off restaurant menus a long time back then were always called "Mississipi Mud Cakes"
Wow you guys dont have mud cake?? I always thought it was an american cake because as a kid my mum used to buy one and it was a 'Mississippi mud cake'
Its a great cake to make, so dense and moist but can be very heavy, and at times a little fragile. But it is divine and as Ozcookie said, very versatile.

I have made this one before and found it really easy.

well now - I've had Mississippi Mud PIE, not really cake. But then - I'm not from Mississippi....
Besides, I was having a hard time imagining anything like that being used for WEDDING cakes.
